Cool Summer Soup Recipes – All you need is a food processor and 10 minutes

Summer is coming and so is the heat. Nobody likes to cook in the heat of summer. A really hot meal on a hot day is almost as unpopular. It could be that a fresh and easy summer soup is just what you need.

Below are 3 soup recipes that can be made in your food processor or blender. If you have the ingredients on hand, none of them take more than 10 minutes to make. They are all delicious, nutritious, and really refreshing on a hot day. While all the recipes suggest that you use a food processor, you can also get very good results using a blender or hand mixer.

These are all very simple recipes, so feel free to modify them and get a flavor your whole family can enjoy.

Summer Vegetarian Soup

This is a great tasting soup with a touch of Italy thrown in. It is super easy to make and very healthy. It’s particularly good on a hot summer day.

an avocado – skinless and pitted of course

4 Roma tomatoes – may not be juicy enough (see below)

Basil to taste (Thai basil is great for this)

4 tablespoons of extra virgin olive oil

How easy is this soup? Just throw everything in your food processor and blend until smooth. If you find that it looks more like a smoothie than a soup, simply add more liquid (or swap out one of the Roma tomatoes for another, juicier variety). Serve in bowls, garnish as desired (chopped chives are good), and enjoy.

Sensational Sauce and Black Beans

This soup is a very simple soup that takes just a few minutes to prepare. It can be served hot or cold, but it always benefits from being heated.
Approximately 4 servings

INGREDIENTS:

2 cans regular-size black beans (any brand is fine, but try a little saltier)

1 1/2 cups soup stock (only use chicken, beef, or vegetable bullion)

1 cup of your favorite sauce (chunky makes a heartier soup)

1 tsp cumin (fresh ground is best used in the soup and you can also sprinkle seeds on top)

1/4 cup sour cream

1-2 green onions finely chopped

Process:

Place the beans, sauce, cumin, and soup stock in a food processor (a blender works fine too). Puree the mixture until it has a creamy texture. Pour the mixture into a medium saucepan and heat over medium-low heat until heated through. This allows the flavors to meld. If you are going to serve it cold, take it to the fridge to chill until mealtime. To eat it hot, simply serve in bowls and garnish with the onions and some of the sour cream.

MANGO SOUP

The mangoes are simply divine. They’re great as a fruit, mixed into drinks, added to salads. They also make a very good fresh summer soup which is explained below.

Ingredients:

1 large RIPE mango (it will be soft, not mushy, to the touch)

2 cups chicken soup stock (make your own or use bullion if needed)

1 tablespoon lemongrass (available in most Asian markets, seems long
greenish canes when you buy it)

1 tablespoon ginger – freshly minced is best

Ground chilies to taste

1 cup yogurt (2% plain is best)

2 tablespoons finely chopped coriander (Chinese parsley)

Process:

Chop the mango and put in the food processor. Mix briefly, then add ginger, lemongrass, chili, and 1/2 cup broth. Blend again until everything becomes very smooth. Transfer the soup to another bowl (make sure it’s big enough) and mix in the rest of the broth first, then the yogurt. It’s best served cold, so store it in the refrigerator until ready to eat. Then put in bowls and serve with the cilantro as a garnish.
